This rich and creamy soup is made so easy with our fish soup base, which is concentrated and full of flavour!
500g fresh fish of your choice-Cut into large chunks
8 King prawns, or crevettes, peeled
200g fresh mussels
1 jar Sailbrand fish soup base
1 handful chopped dill or chives
1 knob butter
3 cloves garlic
1 crusty baguette, sliced
100g good quality mayo
1 pinch saffron
Mix the mayo, saffron, a squeeze of lemon and 1 of the chopped garlic cloves in a bowl to make an aioli, set to one side.
In a large frying pan, heat the butter and add the garlic, king prawns and mussels. Fry gently for a few minutes, then add the fish soup base and bring to a simmer. Add the fish chunks and any of your favourite seafood and simmer for 5 minutes. Check and adjust the seasoning and add a squeeze of lemon
Add the chopped herbs at the last second and serve with toasted baguette slices and aioli.
