UK Mackerel is one of our absolute favourite species. Now in plentiful supply thanks to the warmer weather it’s irridescent skin and firm pink flesh make it perfect for everything from raw tartare to BBQ grilled. It’s cheap, sustainable and delicous, we should all be using it!

Recipe Of The Month
Baked Sea Bass, Fennel, Lemon & Garlic
The perfect dish for a warm summer evening, this is super easy and full of flavour.
Serves 2
Ingredients:
- 1 large Sea Bass – 600/800gm
- 1 Bulb Fennel
- 2 Cloves Garlic
- Handful chopped soft herbs – dill, parsley, chive, chervil all work well
- 1 lemon
- Sea salt, black pepper and olive oil
Method:
- Thinly slice the fennel and garlic, season with olive oil, sea salt and pepper. Thinly slice the lemon and mix all together.
- Make 3 slits along each side of the fish, then rub with olive oil, salt and pepper.
- Mix the chopped herbs with the fennel mix and stuff into the cavity of the bass.
- Place on an oven proof tray and cook in a pre heated oven (200c) for 22 mins.
- Serve with a simple summer salad and glass of something chilled and bubbly!
